Chinese black rice (aka Forbidden Rice, Emperor’s Rice) is a full-grained heirloom rice that is highly nutritious and at one time in China was considered an aphrodisiac. It may have been reserved for the exclusive consumption of the Chinese royal family. Because Chinese black rice (like conventional brown rice) still has its bran attached, it contains more fiber than white rice.
Applications: Rinse Chinese Forbidden Rice well before cooking. If cooking along with other ingredients that you do not want colored, rinse the rice until the water runs clear. Boil two cups of water for every one cup of rice used. Once the water has boiled, cover the pot and simmer the rice on low for 25 minutes. After simmering, remove from the heat and let sit (covered) for ten minutes before serving. Each cup of dry Chinese black rice yields about 2 ¼ cups when cooked.
How to Store and Share: Please keep rice in a cool, dry place.
