Tagliolini is a small, squared off pasta strand shape, with strands
approximately 1/3rd as wide as linguine. This pasta not only possesses
the rich, treasured flavor or Italian summer truffles, but a stronger
wheat flavor as well due to the inclusion of wheat germ.
Almost all other dried pasta’s semolina flour has had its wheat germ
removed. The germ gives wheat a lot of flavor and vitamins, but also
contains healthy fats which make it perishable. Pastificio Morelli, a
family run pasta business, has the 150 year artisanal expertise
necessary to reintroduce the germ without compromising quality or shelf
life, slow drying their pasta in cool air over the course of 36 hours.
Storage: Store truffle tagilolini in an air-tight container or bag kept in a cool, dry place.
Shelf Life: Up to two years unopened, several months once opened.
Simmer tagliolini in boiling salted water until al dente (approximately 3 minutes), then drain and serve with your choice of sauce.
Truffle pasta needs very little to make it a complete dish. Stir in some butter and parmigiano reggiano cheese for a swoon-worthy treat. To take the truffle flavor even further, use truffle butter instead.
