The tenderloin is the most tender cut of the bison. Bison meat has a mild and sweet flavor. Like venison, bison provides a healthy and flavorful "red meat" alternative to beef. It is lower in fat and higher in omega-3s than conventional beef.

Our bison is free range and humanely raised with no added hormones or antibiotics.

Applications: Roast the tenderloin whole, grill it, or cut it into steaks. The tenderloin is the origin of filet mignon steaks.
