Australian rock lobsters (aka spiny lobsters, langouste) have no claws, but they do have wonderfully tasty tails. Australian lobster tails are a rare, spiny lobster variety with rich flavor and delicate, medium-firm texture. They are considered amongst the world’s finest rock lobster tails.

The Australian lobster fishery was one of the first in the world certified as sustainable by the Marine Stewardship Council. Its fishing methods and harvest quotas have been closely watched and controlled since the early 1960s.

These tails are sweet, succulent and easy to prepare.

Shelf Life:

Up to 2 years frozen.

Australian spiny lobster tails can be grilled, steamed, baked, poached or broiled. Because an overcooked lobster tail is a tough lobster tail, remove them from the heat when just barely underdone. They will continue to cook the rest of the way through carry-over cooking.

Pair Australian lobster tails with ingredients like butter, coconut, garlic, corn, curry spices, tarragon, white wine, lemon, cayenne pepper, ginger, basil, cream and avocado.
