Apple mint (aka wooly mint) is a spearmint variant with fuzzy stems and slightly fuzzy & frilly leaves with lightly cream-splotched edges.  Its flavor is less potent than spearmint, with a fresh/sour apple note on the finish.  Pineapple mint has a fairly similar flavor and leaf texture without the cream.

Herb tops are clusters of herb leaves on the stem rather than herb sprigs.  The large impressive leaves on an herb top make beautiful garnishes for desserts, entrees, and cocktails and add vibrant color and flavor to dishes.

Storage: Store apple mint herb tops in your refrigerator crisper in their plastic clamshell.

Shelf Life: Roughly 7 to 10 days.

Apple mint leaves can be used in desserts, entrees, and beverages where their mild mint flavor and hint of sour-apple would be welcome.  However, because its flavor is so mild and also heat-sensitive, apple mint is most often used as a garnish rather than blended into recipes.
