Named for their resemblance to Appaloosa ponies, these speckled beans are wonderful refried, and pair well with most chilies (try them with chipotle chilies).
Dried appaloosa beans are best stored in an air-tight container in a cool, dry place.
Use appaloosa beans in chili, stew, or as refried beans.
Basic Cooking Technique:
To cook, first soak overnight. Drain the soaked appaloosa beans and boil them in water for three minutes, then cover and simmer until tender. Each cup of dry appaloosa beans becomes 2 ½ cups when cooked.
