All that gelatin melts and runs out into the sauce, imparting flavor and a lip-smacking smooth mouth feel. Osso bucco is an economical cut easily turned into comfort food, and antelope osso bucco is an exotic, tender version of this classic.
Antelopes have meat that is very lean and similar to venison and elk, but they are most closely related to domestic goats. This meat is from the Nilgai breed of antelope, originally from India.
